Ice Cream Cupcakes

My love for cupcakes is no secret. It is also clear that I love decorating them, possibly more than I enjoy eating them. The perfect party food- they are guarenteed to go down a treat and you know that if you take cupcakes to a party, you won't have to awkwardly pack them all back in your cake tin and take them back home afterwards.

My last cupcake post was my Rose and Vanilla Cupcakes. Today's cupcake recipe is these delicious ice cream cupcakes.

To make them you will need:

Cakes
 2oz Baking Butter
2oz Caster Sugar
1 or 2 Eggs (2 is better)
Couple of splashes of Vanilla Essence 
3oz Self- Raising Flour
Cupcake Cases
Decoration
Icing Sugar
Baking Butter
Vanilla Essence 
Flakes
Choice of Treat Sauces
Method:
1. Pre-heat the oven to 200 degrees C  and prep your cake cases. Mix the caster sugar and butter in a bowl until it's fluffy, then begin to add the egg as you mix. 
2. Then add the vanilla and fold the flour in using a figure of 8 shape with a metal spoon. I usually give the mixture a quick whizz with the mixer just to get rid of any lumps.
3. Fill your cases and pop them in the oven for 15 minutes.

4. Now to start on the icing. I personally don't do measurements for butter icing because I base it on taste, so mix some baking butter, icing sugar and vanilla in a bowl with a spoon. The consistency of the icing is quite key to the 'ice cream' appearance of the cakes, so make sure it looks a little like this:
 

5. Once your timer has beeped and your cakes are cooling, you will need to prep a piping bag (you can get them really cheaply in ASDA, I got a pack of 10 for £2, but you do need to get the piping ends but they can also be purchased cheaply and easily).

6. Once your cakes are cooled, plop some icing in your piping bag and squeeze it onto your cakes in a 'Mr. Whippy' fashion. For this type of cake, it is probably in your favour to NOT wait until they are completely cool- this will make sense in the next step.

7. Once you have piped your icing on, you need to poke your flake into the cake. You will need to push it actually into the cake so it stays up, hence it is easier if the cakes are a little warm.

8. Finally, after a little while of letting the icing set, give your cakes a squirt of sauce of your choice, and there you have it. Ice- cream cupcakes!
 

9. I have seen some really creative people actually bake the cakes in a cone, so if you really want an authentic ice-cream feel to your cakes, you could give that a bash.
